Wild #4 Bière de Soif Refermented With Dornfelder 2019 tasting notes
Wild #4 from Browar Stu Mostów is a Sour Ale fermented for one year in wooden barrels with yeast and bretts and brewed with Dornfelder grapes. It has an intense aroma of black fruits, blackberries, cherries and plum and some flowr hints. Taste is acidic and tart, with some sweetness and grape notes and fruit hints.
A sour ale, also known as wild ale is a category that englobes all type of ales that are brewed with other bacterias than traditional brewing yeasts—Brettanomyces, Lactobacillus, Pediococcus or Acetobacter to name the most common.
